Chateau Filhot 2016 (375ml)
Chateau Filhot is a Second-Growth Sauternes producer. Founded in 1709 by Romain de Filhot, it is still family-owned to this day, currently managed by one of the descendants, Count Henri de Vaucelles. The estate covers an area of 350 hectares with 62 hectares of vineyard all along the south of the village of Sauternes, just outside of Bordeaux. Specialising in sweet dessert wines, they are one of the region's oldest and most revered Chateaux. Their 2016 is made from a blend of 60% Sémillon, 36% Sauvignon Blanc and 4% Muscadelle - all of which have been affected by botrytis, which enhances the natural sugars in the grapes and the resulting wine. Deliciously sweet with notes of nectar, honey, apricot and some ginger; it's an amazing wine to pair with blue cheeses.
